Let’s make it a fun lunchable! We’ll have a healthy berry salad, some hard-boiled eggs and crunchy veggies.
- 1/4 cup pecans (or fave nuts)
- Lime or Lemon Juice
- 2 tsp Honey
- Juice of 1/2 lime or lemon
- Heat eggs until boil, cover for 10 minutes. Peel!
- Rince/ Slice 1 cup berries.
- Cook quinoa, divide into.
- Chop nuts.
- Mix quinoa, berries, nuts, honey and juice.
- Prep one meal with quinoa mix, 2 eggs, 1 cup veggies.
