Greek Potato Salad

Ingredients:

  • 2 potatoes
  • 2 tomatoes
  • 1 cup Kalamata Olives
  • Red onion
  • Quinoa
  • Spinach
  • 1 container Feta Cheese
  • Olive Oil
  • Red Wine Vinegar or Balsamic Vinegar
  • 1 teaspoon salt, or more to taste

Instructions:

  • Preheat the oven to 400F.
  • Dice potatoes, toss with oil and cook for 20-30 minutes until cooked through.
  • While potatoes are cooking, prepare 2 cups cooked quinoa.
  • Dice tomatoes, 1/2 onion + 2 cups spinach.
  • Get out four containers / jars. Assemble in this order:
    • 1T Olive Oil
    • 1T Vinegar
    • 1/4 potatoes
    • 1/4 tomatoes
    • 1/4 onion
    • 1/4 olives
    • 1/4 quinoa
    • 1/4 spinach
    • 1/4 Feta cheese
