
Ingredients:
- 2 potatoes
- 2 tomatoes
- 1 cup Kalamata Olives
- Red onion
- Quinoa
- Spinach
- 1 container Feta Cheese
- Olive Oil
- Red Wine Vinegar or Balsamic Vinegar
- 1 teaspoon salt, or more to taste
Instructions:
- Preheat the oven to 400F.
- Dice potatoes, toss with oil and cook for 20-30 minutes until cooked through.
- While potatoes are cooking, prepare 2 cups cooked quinoa.
- Dice tomatoes, 1/2 onion + 2 cups spinach.
- Get out four containers / jars. Assemble in this order:
- 1T Olive Oil
- 1T Vinegar
- 1/4 potatoes
- 1/4 tomatoes
- 1/4 onion
- 1/4 olives
- 1/4 quinoa
- 1/4 spinach
- 1/4 Feta cheese
